We strip ganache down to its purest form to produce flavor explosions that are free from extras like butter or cream (yay, it's vegan). The results are pure and stunning, rich but light. Big shout-out to our friend and mentor Damian Allsop, who pioneered the work on this technique.
Because we strip everything away that's not directly related to the core flavors, we leave out cream, butter or any other dairy products. (Don't get us wrong, we love butter, it does add flavor.) And because we do that, these chocolates are vegan! This was a sort of Eureka 💥moment for all of us - especially our lactose intolerant or vegan friends. And we love that. We love that we created something for flavor, that also fulfills a major functional need for so many. 🌱
No sugar added
Same for sugar. We don't need more of it! The chocolate itself is sweet, the fruit is, the nuts are. Why add more? 🙉We don't. True story, when we first did our nutritional calculations we thought we'd made a mistake. We didn't. It turns out, when you use good chocolate and good products, your sugar content is way lower than industry standard. Surprise. 💃🏽

Our chocolate is fresh. What does that mean? 🤷🏻️👨🏻🍳Chocolate practically keeps forever, it's a form of preserving cacao. Pralinés and ganache (which is the delicious inside) are made with chocolate + fresh ingredients such as fruit or cream 🍌🥛. Many producers extend durability by adding sugar. We don't. In fact, we don't add much of anything, which is why our chocolates need to be kept cold and enjoyed within two weeks.
We make chocolate for people that can handle them. The chocolate skin around the chocolate soul is thin - by design. It's part of the magic. And with it comes an innate responsibility to handle with care. ❤️So don't knock the choc, don't box the box 🎁🥊and keep them close to your heart and fridge. Cause nobody wants to be the owner of a broken heart 💔(much better than a) owner of a lonely heart (much better than a) owner of a broken heart...
